Two single-variety oils, two stories in the bottle

Centennial: single-variety oil is the absolute pinnacle of Tuscan tradition: mono-cultivar Frantoio, medium fruity, with a fresh scent of cut grass and artichoke leaf. It yields an intensely robust flavor profile, rich with notes of green tomato leaf and a powerful, peppery finish.

Perfect for bruschetta, flavorful crostini, fresh salads and cheeses. Excellent on beef, salmon and tuna tartare or carpaccio, as well as sushi. Ideal for finishing pasta, risottos, soups and broths, by adding it at the end of cooking.

Origin: One of Italy's least widespread olive cultivars, born in a small area around Monte Amiata in southern Tuscany. FILO sources this mono-origin lot from a single grove. Harvested and pressed the same day, cold extraction throughout. A small production, medium fruity, that stands out for its strong floral notes of rose petal.

Excellent on oysters, amber-jack tartare, white fish and shellfish. Perfect with carpaccio, seafood or vegetable pastas, grilled meats and artichokes. Surprising on chestnut cake and fruit sorbets.

Both picked green, early harvest, pressed the same day as separate batches: cold extraction, controlled atmosphere, early stop to protect the polyphenols. Centennial runs medium fruity with cut grass and artichoke leaf. Origin runs medium fruity with strong floral notes of rose petal.

Limited quantities from 2026 harvest. Once it's gone, it's gone.

Pre-Order FAQs

When will my order ship?

First shipment lands in the US early 2027. You're charged at checkout and your bottles ship as soon as the batch clears customs. Exact date confirmed by email.

What if I want to cancel?

Full refund any time before the order ships. If a shipment date moves, you'll be notified by email with the option to cancel.

What is your return policy?

Because of the visible seal on every bottle, we don't accept returns once a bottle has been opened. The rim between cap and glass changes color the moment the seal breaks, so tampering or use is always visible on inspection.

If an unopened bottle arrives damaged or defective, contact us within 15 days with photos. We'll replace it or refund it, no return shipment required.
